Dunar Basmati Rice with Mango and Mint (Recipe)

2 Tbsp. vegetable oil1/2 medium onion, finely diced1 garlic clove, minced2 tsp. finely chopped ginger1 1/4 cups Dunar long grain rice2 cups low sodium chicken or vegetable stock or broth1 ripe medium mango, peeled and cut into small cubessalt and white pepper to taste1/4 cup chopped fresh mint
Place the oil in a pot set over medium, medium-high heat. Add the onion, garlic and ginger and cook until softened, about 3 minutes. Mix in the Dunar rice and cook and stir 2 minutes. Add the remaining ingredients, except mint, and bring to a boil. Cover the rice, turn the heat to its lowest setting, and cook 15 minutes, or until the rice is tender. Fluff rice with a fork and then mix in the mint. Transfer to a serving dish and enjoy.
