Basmati Rice Pudding Recipe

Ingredients3/4 cup Dunar basmati rice1 1/2 teaspoons fine sea salt4 1/2 cups soy milk1/2 cup organic cane sugar1 slightly heaping tablespoon cornstarch1 1/2 tablespoons vanilla extract1/4 teaspoon ground cardamompinch of fine sea salt


Preparation1. Combine 1 1/2 cups water, the rice, and the salt in a saucepan and bring to a boil. Cover and simmer over very low heat 8 to 9 minutes, until most of the water is absorbed. Check frequently and stir to make sure it doesn't stick. Add 3 1/2 cups of the soy milk and the sugar. Continue simmering on very low heat for an additional 20 to 25 minutes, until the rice is soft and most of the milk absorbed. You want a spongy texture, with no bite. Remove the rice from the heat.
2. Pour 1/4 cup of the remaining soy milk into a bowl and whisk in the cornstarch to dissolve. Add the vanilla extract and cardamom. Pour the cornstarch-milk mixture along with the remaining 3/4 cup soy milk into the hot pudding and stir to combine. Add a pinch of salt. Serve warm or at room temperature.

Sweet Basmati Rice with Carrots & Raisins Recipe:
Ingredients:
1 medium onion, sliced4 cups freshly shredded carrots, 2 tbsp vegetable oil, 2 cups water, 1½ tsp salt, ¾ cup raisins, 1½ cups Dunar basmati rice  Topping:5 tbsp raw slivered almonds, ½ tsp vegetable oil


In a sauté pan, heat oil and cook onions at medium heat until translucent, about 5 minutes Add shredded carrots and continue cooking at medium-low heat for about 7 minutes Add water, salt and raisins and bring to a boil Add Dunar basmati rice and stir well. Bring to a boil, cover and simmer for 25 minutes In a separate skillet, slivered almonds in ½ tsp of vegetable oil until golden brown, 3-5 minutes. Set aside Uncover the rice and quickly and gently fluff it up with a fork. Put the lid back on and let it sit, off the heat, for 10 minutes.Top with almonds before serving

Mushroom Biryani Recipe:


Ingredients Dunar Basmati Rice - 1 cup, Onion - 1 medium size, Tomato - 1 medium size, Mushrooms - 3/4 cup chopped,  Turmeric powder - 1 teaspoon,  Lemon juice - 1 tablespoon, Yogurt - 2 tablespoons, Oil - 2 spoons,  Bay leaf - 1, Salt to taste







For the masala to grind

Ginger - 1 inch
Garlic - 4 pods
Tomato - 1 small
Onion - 1/2 small sized
Cardamom - 4
Cloves - 4
Cinnamon stick - 1 stick
Coriander leaves - 4 sprigs
Green chillies - 3
Mint leaves - 2 sprigs


Wash and soak the Dunar basmati rice for at least 15 to 20 minutes.
Add all the ingredients listed under masala into a fine paste by adding a little water.
Finely chop the mushrooms, onions and tomato.
In a pressure cooker, heat the oil and add the bay leaf followed by the onions. Saute till the onions turn translucent.
Add the ground paste and saute for about 2 minutes, until the raw smell goes away and oil starts to separate from the mixture.
Once the ground paste gets cooked, add the tomatoes and fry for about 2 minutes until they get well cooked. Then add the mushrooms and saute for a minute.
Finally add the rice and required quantity of salt. Also add the yogurt and lemon juice. Finally add enough water (water:rice = 1.5:1).
Mix everything together. Cover the pressure cooker and cook until you get two whistles.
Garnish with chopped coriander leaves.
Serve hot with raita or a gravy/curry of your choice!
